What is raw?

Raw is food that contains enzymes. Enzymes aid in the absorption of foods. Heating food over 116°F destroys the enzymes, and therefore the food's nutritional value is reduced significantly. Raw foods have enormously higher nutrient values than the foods that have been cooked.
